Idan's Soufflé

Idan was a communication officer in Golani Brigade's 13th Battalion. He was a devoted fan of Maccabi Tel Aviv. He loved the army and planned to continue to the platoon commander's course. Idan had a girlfriend for the past three years, Lihi, who was also a communication officer in the army. On 7th October, Idan was stationed at Nahal Oz and fought bravely against terrorists who infiltrated the base. He left behind his parents, two sisters, girlfriend, and a family who misses him every day.
This is not just any soufflé. This is the dessert Idan loved the most. His grandmother used to make double the amount for Idan's weekend visits home, so he would have enough for both Friday and Saturday. He loved to eat it with vanilla ice cream.

Ingredients
Ingredients (6 servings):
250 grams dark chocolate
⅓ cup oil
3 eggs
⅓ cup sugar
Pinch of salt
2 tablespoons chocolate liqueur or brandy (optional)
2.5 tablespoons cornflour
20-30 grams almond flour
For serving:
Powdered sugar
Vanilla ice cream
Instructions
Preheat the oven to 190 degrees Celsius.
Well grease individual cups that are suitable for baking in the oven.
In a bowl, melt together the chocolate and oil until you get a smooth and thin mixture.
Add the liqueur (if using) to the chocolate mixture and mix.
In a mixer bowl, whisk the eggs, sugar, and salt until you get a fluffy, light, and bright mixture.
Gently fold in the chocolate mixture until almost uniform. Add the cornflour and almond flour and fold until you get a uniform mixture.
Pour the batter into the cups and bake for 10-15 minutes or until the soufflés are puffed and set around the edges but still soft and gooey in the center.
Serve hot with powdered sugar and vanilla ice cream.
